This is my go to recipe for lunchboxes, that my Mum has made for many years and i remember from growing up. Took me a while to remember the amounts not in ounces! It uses few ingredients, but is super quick to make and simply delicious to eat. 

I've seen lots of variations with raisins or nuts added, but this one is im my opinion by far the best. 

Mum always used to make it in round tins and cut it into triangles, but you can use whichever shaped tin you have. Just dont make it too think.

Whilst you can make it with margarine, it wont have the delicious buttery taste that only butter can give. 


Ingredients

  • ½ cup butter 
  • ½ cup packed brown sugar
  • 4 tablespoons golden syrup 
  • 3 cups rolled oats

Method

  1. Preheat the oven to 175 degrees C.
  2. In a saucepan over low heat, combine the butter, brown sugar and golden syrup. Cook, stirring occasionally, until butter and sugar have melted. Stir in the oats until coated. Pour into an 7 or 8 inch square baking pan. The mixture should be about 1 inch thick.
  3. Bake for 30 minutes in the preheated oven, or until the top is golden. Cut into squares, then leave to cool completely before removing from the pan.
